8 oz. pkg. Jimmy Dean Pork Sausage, regular
1 c. Onion, finely diced
4 lg stalks Celery, thinly sliced or diced
¾ c. Butter, more if necessary
2 tbsp. Sage, rubbed, dried (4 tsp)
1 oz. pkg. Mushrooms, dried, minced (1 cup)
1 loaf Bread (or 12 oz. pkg. stuffing bread, cubed)
1½ c. Water
1 tsp. Salt
1 tsp. Black Pepper
- Turkey Giblets, minced (liver, heart, gizzard)

1. If you are using dried mushrooms start preparing them by soaking them in a bowl of water while you are doing the other steps.
2. Prepare your bread for the dressing. There are a few ways of doing this:

- Use pre-cubed stuffing mix purchased at the store.
- Leave your bread out overnight to dry, when ready to use toast the bread in a toaster and then break it up into bite-sized pieces.
- Preheat oven to 275º F. Adjust oven racks to lower-middle and upper-middle positions. Break the bread up into bite-sized pieces then spread evenly over 2 baking sheets. Stagger trays on oven racks and bake until completely dried, about 50 minutes total, rotating trays and stirring bread cubes several times during baking. Remove baking sheets from the oven and allow them to cool.

3. Once the bread is prepared and cooled, (if necessary), place bread into a large bowl.
4. Preheat oven to 350º F.
5. Add sage, salt, and pepper to bread mixture.
6. Prepare your onions by finely dicing them into small pieces.
7. Prepare your salary by slicing your stocks into small, thin slices.
8. In a medium skillet, cook the sausage until brown then add to bread mixture (do not strain off grease). Mix until combined.
9. In the same pan, melt ¾ cup butter. Once butter is melted add the onion and cook for about 5 minutes, add your celery, and cook until softened, about 10 minutes. Then add to the bread mixture. Mix until combined.
10. Clean the turkey giblets (heart, gizzard, liver) then place in a food processor or mixer to mince/puree, then add to the bread mixture. Mix until combined.
11. If using dried mushrooms and they have been soaking, squeeze out the water and then place in the food processor or mixer to mince. If using fresh, simply mince. Then add to the bread mixture. Mix until combined.
12. In a saucepan, combine 1½ cups of water and turkey base, and bring to a boil.
13. Gradually add turkey base to the bread, use enough to make the dressing mixture moist but not soggy. Save any remaining base in case it is needed during the baking process.
14. Poor bread mixture into a greased (buttered) 13 x 9-inch sized baking dish. Cover tightly with aluminum foil.
15. Bake until an instant-read thermometer reads 150° F when inserted into the center of the dish, about 45 minutes. Remove foil and continue baking until golden brown and crisp on top, 15-20 minutes longer.
16. Remove from oven, let cool for 5 minutes, and serve.

Time Saver: You can complete steps 1-14 a day in advance. Remove from the refrigerator and allow the stuffing to come to room temperature for at least 1 hour before baking.


Tips:
1) May replace dried mushrooms with 5-oz, pkg. of fresh, diced mushrooms.
2) May replace loaf of bread with pre-cubed stuffing mix, 12 oz package.
