1½ c. Water, hot
6 oz. pkg. Stovetop Stuffing Mix (chicken or traditional sage)
40 Mushrooms, fresh (about 2 lbs.)
2 tbsp. Butter
2 cloves Garlic, minced
10 oz. pkg. Spinach, frozen, chopped, thawed, well drained
1 c. Mozzarella Cheese, shredded
1 c. Parmesan Cheese, grated

Directions:

1. Heat oven to 400º F.
2. Add hot water to the stuffing mix in a large bowl; stir just until moistened.
3. Remove stems from mushrooms, and chop stems. Melt butter in a skillet on medium heat. Add chopped stems and garlic; cook and stir for 5 min. or until tender. Add to stuffing with spinach and cheese; mix well.
4. Spoon stuffing mixture into mushroom caps; place, filled sides up, in a shallow pan.
5. Bake for 20 min. or until mushrooms are tender and the filling is heated through.
