3 chicken, apple Gouda sausages
2 teaspoons olive oil
½ cup chopped onions
1 cup orzo
3 cloves garlic, minced
¼ kosher salt
2 cups, broccoli florettes
¼ parmesan cheese, grated
2 teaspoons lemon zest
3 cups, low sodium chicken broth

Step 1

Heat oil in a 12 inch cast iron or large heavy skillet over medium high heat. Add sausage and onions; cook, stirring occasionally, until the sausage is browned, 3 to 4 minutes. Add orzo and garlic, cook, stirring for one minute more.

Step 2

Stir and broth, and salt. Bring to a boil. Stir in broccoli. Reduce heat, cover and simmer, until orzo is tender, 8 to 10 minutes. Uncover and continue cooking until the broth is absorbed.

Step 3

Stir in Parmesan and lemon zest. To serve, top with additional Parmesan, if desired.
