1 lb chicken
Marinade
1 T water
2T shaixing wine or mirin
½ tsp salt
¼ tsp sesame oil
⅛ tsp white pepper
Aromatics
3-4 pieces dried tangerine or mandarins orange peel
6 dried red chilis
3 star anise
1 clove garlic minced
1 knob ginger minced
Chicken coating
1 cup cornstarch
1 egg
½ cup flour
Sauce
1 cup orange juice
¼ sugar
2 T rice vinegar

Directions:

Cut chicken in chunks, small and large. Marinate for 30 minutes, while hydrating orange peels, star anise and chilis. When chicken is ready rub with 1 T cornstarch. Then coat with the batter( should be very thick). Fully coat battered chicken in a mix of 1:1 flour and cornstarch. Shallow fry in ½ inch oil until browned , replace oil and brown again at 400.
Lightly toast hydrated aromatics, saving hydrate liquid to make slurry of 2 T liquid and 1 T cornstarch . Once toasted add minced garlic and ginger for 30 seconds before pouring in slurry. Once sauce simmers add slurry slowly, you may not need it all, just right amount to make a nice consistency.
