1 1/2 cups warm water
1 egg
1/3 cup non-fat dry milk
1/2 cup mashed potatoes (leftover or made from warm water mixed with potato flakes)
1/4 cup shortening
1 1/2 teaspoons salt
4 to 4 1/2 cups flour
1 tablespoon yeast
2 tablespoons of sour dough starter*

1. Put in the yeast in one corner of the bread maker.
2. Add in the dry stuff- flour, powdered milk,
3. Add in the wet stuff- mashed potatoes, sour dough starter & the shortening. salt, egg and then the water.
4. Plug in the machine. Hit select until it goes to manual. Then hit start.
5. The machine will kneed for about 20 minutes. When it is finished kneeding, shut off and unplug the machine. Let the dough proof.

6. Proof for one hour, or double in size.

7. 1 1/2 cups warm water

8. When the dough cycle is finished, transfer the dough to a floured surface, preferably a lightly floured pastry cloth
9 Pat the dough out to a 12 x 12” rectangle.
10. Using a pizza cutter, cut the dough into 12 1” wide strips; cut the strips in half lengthwise, forming 24 strips.
11. Tie each strip into a knot, tucking the ends under; place each knot on a parchment-lined or greased baking sheet.
12. Let the rolls rise until double in bulk
13. Bake in a preheated 375° oven 15-20 minutes or until golden brown..

Sour dough starter:

1 T sour dough starter that is from the fridge.
Add about 6-7 T flour, 1/4 c warm water. Mix

Cover it and let rise (4-5 hours in the yogurt setting in the instant pot).

From the dough, you would use about 1/2 for the buns.
