2 pounds chicken breast cut in large cubes
zest and juice of 1 lemon
1/4 c olive oil
2 T honey plus more to drizzle
1 T fresh grated ginger
1 T ground coriander
1 T ground cumin
2 t salt
1 t black pepper
2 lemons
fresh parsley chopped

server over couscous with a side of Yogurt or Tzitzi sauce

1. In a gallon freezer bag add: lemon zest, lemon juice, olive oil, honey , ginger coriander cumin salt and pepper. Mix together.
2. Put 2 T in a snack size bag for bushing on while grilling
3. Add chicken to marinade.

Freeze.

To cook: Thaw in the refrigerator

Prepare couscous. Place chicken on skewers, then place on foil lined sheet pan. Add one lemon half to each corner of the pan. (or grill)

In Preheated to broil settings. Broil on a top rack of oven for 12 minutes or Grill. Turning halfway through.

Brush reserved marinade onto chicken. Drizzle honey over lemon halves and serve along side for squeezing over chicken. Serve with Couscous and a side of plain yogurt.
