Ingredients: All Recipes start with: 3 T Water 8 T Butter, unsalted and chilled (cut into 8 pieces)
for different variants add
Korean Style (Good on Pork) 1 T Gochujang 2 t Lime Juice ¼ t Sugar
French Style (good with asparagus) 1 T stone-ground Mustard
Sweet Style (Good with Crepes) 1½ T Apricot Preserves 1½ t Peach Schnapps 1 T Lemon Juice ⅛ t Salt

Directions:Bring water to a simmer in a small saucepan over medium-high heat, reduce heat to maintain very gentle simmer. Add 1 piece of butter and cook, whisking constantly until butter melts (20-30 seconds). Continue to cook, whisking in butter 1 piece at a time until all the butter is incorporated and sauce has the consistency of thin gravy (3-4 minutes).
Once you've reached this stage, add the remainder of the ingredients for the style you plan to prepare, cover and keep warm until you serve it. |

Notes: Monte' is simply butter in sauce form. For additional varying flavors you can
Add stock in place of the water
Whisk 2 t fresh minced herbs. Hardy herbs such as Rosemary can be added at the start of cooking while delicate ones such as Terragon should be added at the end (so it doesn't brown).
Wine, Reduce ⅓ cup of wine plus ¼ t onion powder to 3 T and substitute for water. Season to taste with herbs (tarragon, rosemary, thyme), salt and wine vinegar.
Preserves, Booze and juice. Whisk in any combination of preserves (jam/Jelly) at a ratio of 1½ preserves to 1½ t booze. Examples are raspberry jam-Chambord, apple jelly-Brandy, plum preserves-Amaretto.
