1 lb ground beef
½ C chopped onion
½ C chopped pepper
1 can diced tomatoes
1 tsp salt
1 tsp oregano
½ tsp pepper
3 C beef broth
4 C diced potatoes (peeled or unpeeled, chef's choice)
¼ C flour
1 C milk
8 oz shredded cheddar cheese
diced pickles (garnish)

Directions:

Brown the ground beef

Add onion, pepper, spices, tomatoes, broth, and potatoes.

About 15 minutes before serving, combine flour and milk; whisk until no lumps. Then stir into soup. Add cheese and combine.

Cover and cook until soup thickens.

Serve with toasted bread and diced pickles on top.

This was originally a crockpot recipe. To leave in crock pot, brown the beef, then add all the ingredients until the flour. The flour, milk and cheese will be added 30 minutes before serving.

Do not skip the pickles. It really brings out a good flavor.
