4 Tbsp. Butter
1/2 C. Flour
1/2 Onion, diced finely
1 Large Can Enchilada Sauce (I like green sauce, but red is good too)
5(ish) C. Chicken Broth
1 Can White Beans (Cannellini, Navy, etc.)
1 Can Black Beans, rinsed
1 Can Corn
1 Bell Pepper, diced finely
4(ish) Chicken Breasts (add more or less as desired)
1/2 Packet Taco Seasoning

Directions:

In a large pot, melt butter. Add onion and cook until soft. Add flour and mix well to make a roux. Slowly add enchilada sauce while stirring continuously. Add chicken broth, then follow that with the rest of the ingredients. Heat thoroughly, then serve with desired toppings (I prefer cheese, sour cream, and tortilla chips).
