Date Squares Recipe

6oz self raising flour
6oz rolled oats
6oz marg or butter
3oz sugar
12oz pitted dates
2 teaspoons vanilla essence
1/4 pint water

deep baking tin at least 8" length grerased or lined with baking parchment

Directions:
Directions:
1. Grease and line the baking tin with parchment paper
2. Turn oven to 180º
3. Chop dates roughly checking for stray stones then put in a small saucepan with the water and vanilla essence. Heat gently stirring often and add more water if it becomes dry.
4. Heat for at least ten minutes until the dates are soft and paste-like.Stir round to combine and let cool.Add more water if necessary so it is a thick paste.
5.Put flour and butter in a food mixer and combine until it resembles fine bread crumbs. You can also rub this in by hand.
6. Add the sugar and oats to the dry mix and combine.
7. Press half the dry mixture into the tin flattening it out so it's firm.
8. Spread the date mixture on top and smooth with a knife making sure it reaches all the corners.
9. Add the rest of the dry mixture on top and pat down really well until firm.
10. Bake in the oven for 30 minutes or until brown on top.
11. Mark out portions but leave to cool before removing from the tin.

This will keep for several days in a tin or it can be frozen in portion sizes. It makes a handy packed lunch.
