2 lbs beef pounded to 1/4" thickness
1 cup breadcrumbs
1 cup grated parmesan
3/4 cup minced fresh parsley
4 cloves garlic (minced)
5 tbsp olive oil
salt and pepper
Wood skewers or twine

Directions:
Directions:
Prepare Tomato Sauce and simmer.

In a bowl, mix together breadcrumbs, cheese, parsley, garlic, 3 tbsp olive oil, salt and pepper. Set aside.

Spread a small amount of the breadcrumb mixture to the center of the pounded beef, press down into the beef. Roll up the beef.

Repeat until the beef and stuffing have all been used up. Hold the beef rollups together with skewer or twine.

Add 2 tbsp of olive oil to a frying pan over medium-high heat and sear the beef until golden brown, 2-3 minutes each side. Drop each braciole into the simmering sauce. Let simmer 1 hour, careful not to overcook and fall apart.

This was a special treat growing up. Mamma/Nonna didn't make it very often but when she did and it simmered in her sauce, the sauce was rich and delicious. I was intimidated to make this, but it turned out to be easy. When I made this recipe for the first time on Feb 3, 2024, my boys Matt and Frankie could not remember ever having it before at Nonna's. The beef was flaky and tender. We all loved it. Be sure to start with a great tasting sauce.

I used a Top Round which I found at the store already pounded to 1/4" thickness. Can also use Flank Steak, Skirt Steak or Sirloin.
