1 - pound Smoked sausage or Kielbasa, sliced into 1/2 - 1 inch slices
2 - pounds fresh green beans, trimmed and snapped into 2 inch pieces
1 1/2 - pounds red potatoes, cut into 2 inch squares
1 - tablespoon bacon grease
1 - onion, cut into pieces
1 - garlic clove, minced
2 - cups chicken broth or stock
1/2 - teaspoon kosher salt
1/2 - teaspoon or more pepper
1/2 - teaspoon garlic powder
1/2 - teaspoon onion powder
dash of cajun seasoning, optional

Directions:
Directions:
Wash and cut up potatoes into 1 inch cubes and cut up the onions into small wedges.
2. Wash green beans, trim ends and snap into 2 inch pieces
3. Cut smoked sausage or kielbasa into bite size pieces (about 1/2 - 1 inch slices)
4. Melt the bacon grease in a large skillet or pot over medium high heat. Add the onions and saute until translucent. Add the
potatoes and green beans.
5. Saute all the vegetables for about 5 minutes. Add the garlic about 3-4 minutes after the potatoes and beans so it doesn't
burn.
6. Add the broth or stock and the seasonings and simmer on medium heat.
7. Add the smoked sausage or kielbasa about half way through the cooking time.
8. Continue cooking until the potatoes are fork tender and the green beans are cooked through about 25 minutes.
9. Remove from heat, ladle into bowls and season with salt and pepper.

You can brown the sausage before adding it into the pot or just toss it in. Browning the sausage first gives the sausage and
broth a good flavor
