1 tbsp olive oil
1 yellow onion/scallions/chives
16 oz ground chicken/turkey/sausage
6 eggs
3/4 cup mozzarella cheese
3/4 cup feta cheese
3 cups chopped spinach
2 cup almond flour
1 tsp salt/pepper/garlic powder
2 tsp baking powder

Directions:
Directions:
Preheat oven to 400 and line with parchment paper
Saute onion, ground meat until completely cooked
Whisk together eggs in a bowl, then add cheese, spinach and sauteed mixture
Add dry ingredients and mix until combined
Make mall balls of mix on a baking sheet
Sprinkle cheese on top.
Cook for 12-15 min

Refrigerate up to 4 days or freeze
