Ingredients: 1 cup butter, softened
3/4 sugar
3/4 cup packed light brown sugar
1 large egg, room temperature, lightly beaten
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 cups quick cooking oats
1 teaspoon baking soda
1/4 teaspoon salt
1 cup dried cranberries, rough chopped
1 cup miniature semisweet chocolate chips
1 cup milk chocolate English toffee bites

Directions:In a large mixing bowl, cream butter and both sugars until light and fluffy, 5 to 7 minutes. Beat in egg and vanilla. Combine the flour, oats, baking soda and salt. Gradually add to creamed mixture and mix well. Stir in cranberries, chocolate chips and toffee bites.
Shape into three 8-inch rolls; wrap each in waxed paper with the ends tightly twisted. Refrigerate 2 hours or until firm.
Preheat oven to 350º F. Line baking sheets with parchment paper. Unwrap rolls and cut into 1/2-inch slices. Place slices 2 inches apart on the parchment lined baking sheets. Bake for 8 to 10 minutes or until golden brown. Rotate baking sheets halfway through. Remove to wire racks to cool.
Store in airtight containers. |
