2 lb Chuck roast
1/2 red onion, sliced
1/3 cup Balsamic vinegar
1/2 cup tomato sauce
1 tablespoon Worcestershire sauce
2 garlic cloves, minced
1/4 teaspoon dried thyme (or 1 tsp fresh), chopped
1/4 teaspoon black pepper
1/3 cup beef broth

Directions:
Directions:
Place beef roast in slow cooker and sprinkle onions over and around it.
In a small bowl whisk balsamic vinegar, tomato sauce, Worcestershire, garlic, pepper and thyme. Pour sauce over roast. Pour the broth around the meat.
Cover and cook on low for 7-8 hours for a tender pull apart result. When done the roast should be fork tender.
Thicken the sauce by whisking a tablespoon of cornstarch in a small bowl with 1/2 cup of the sauce. Pour thickened sauce into the slow cooker with remaining sauce and meat and stir to combine.
Serve the pot roast with balsamic sauce and your favorite side dishes.

To cook in Instant Pot:
Follow instructions for slow cooker recipe but instead place everything in the instant pot. Set to high pressure for 1 hour. When done let the instant pot release pressure on its own for about 15 minutes. When done, thicken sauce the same as for the slow cooker.
