40 pounds asparagus
2 bulbs garlic


9 cups water
6 cups apple cider vinegar
3 tbsp pickling salt
3 tsp pickling salt

Make Brine:

Cut asparagus into lengths to fit jar. Put a clove of garlic in each jar. Pack asparagus tightly into hot steadied wide mouthed jars, leaving 1/4" headspace.

Pour vinegar mixture over asparagus, leaving 1/4" headspace.

Cover at once with metal lids and screw bands tight. Process in boiling water 10 minutes.

Let sit for 2 weeks before using.
