1/4 lb. very thinly sliced salami
1/4 lb. very thinly sliced pepperoni
1/4 lb. very thinly sliced capicola or black forest ham
1/4 lb. very thinly sliced mortadella or bologna
1/4 lb. thinly sliced provolone cheese
1/4 lb. thinly sliced mozzarella cheese
3 cups shredded lettuce
1 medium tomato, sliced
1/3 cup thinly sliced red onion
1/3 cup sliced black olives
1/3 cup sliced pickled banana peppers
1/3 cup mayonnaise
12 mini sub buns

Dressing:
1/4 cup olive oil
2 tablespoons red wine vinegar
1 heaping tablespoon grated parmesan cheese
1 clove garlic, finely chopped
1/2 teaspoon italian seasoning
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper

Directions:
Directions:
1. On a LARGE cutting board, spread out shredded lettuce and top evenly with deli meats and cheeses. Add tomato, onion, olives and banana peppers.
2. Using a large Chef's knife or large pizza chopper, chop up all ingredients to a small dice. Once the desired dice is reached, scrape into a large bowl/container and set aside.
3. Add dressing ingredients to a dressing or mason jar with lid and shake thoroughly to mix. Pour over meat and cheese mixture.
4. Add mayonnaise and stir, along with dressing, into the meat and cheese mixture until well combined. Add more mayonnaise if mixture is too dry.
5. Spread chopped mixture onto sub(s) and enjoy!
