Marinade and Sauce

1 1/2 Lb. Boneless/skinless Chicken, cut into 1 1/2 " pieces
3/4 cup Chiicken Broth
3/4 cup Orange Juice
1 1/2 ts. Orange Zest
8 strips of Oragne Peel (remove any white)
6 Tbs. White Vinegar
1/4 cuo Soy Sauce
1/2 cup Packed Brown Sugar
3 Medium Cloves of Garilc, minced
1 inch of Ginger, grated
1/4 ts. Cayenne
Tbs. Cornstarch plus 2 ts. Cornstarch
2 Tbs. Cold Water
8 Small Whole Dried Red Chiles, sliced

Coating and Fryibg Medium

3 Egg Whites
Cup Cornstarch
1/4 ts. Cayenne
1/2 ts. Baking Soda
3 cups Oil (for Frying)

For Marinade

Place Chicken in Large Ziplock bag. Combine Chicken Broth, Orange Juice, Grated Zest, Vinegar, Soy Sauce, Sugar, Ginger, Garlic and Cayenne in saucepan, Whisk until Sugar is dissolved. Put 3/4 cup in with the Chicken, Refrigerate 30-60 minutes, no longer!

For Coating
Place Egg Whites in pie pan , using fork, beat until frothy.
In second pan, whisk Cornstarch, Cayenne and Baking Soda
Drain Chicken, dip in Egg Whites then Cornstarch
Fry oil 350º Oil for 3 Minutes or until done
Bring remianing Sauce mixture to a boil over high heat
In a small bowl, whisk cornstarch and Cold Water, whisk into Sauce, stirring occasionally until thick and translucent about 1 minute
Off heat, add Organe Peel and Peppers
Gently toss in Chicken
