2 cups -500 mL - cooked rice
1 cup- 250 mL -finely diced celery
1 cup - 250 mL- cooked snow peas or green peas
2 green onions finely chopped or about 1/4 cup chives
4 hard cooked eggs- finely chopped with one sliced for garnish- reserved till serving time



Curried Dressing

1/2 cup -125 mL- vegetable oil
3 tbsp - 50 mL- g/f soy sauce
2 tbsp. - 25 mL- vinegar * g/f
2 tsp. -10 mL- curry powder
2 tsp. -10 mL- sugar. (I usually leave it out but it does balance the flavours)
1 tsp. -5 mL- finally chopped fresh ginger root
1/2 tsp -2mL- salt
1/2 tsp. -2 mL- celery seeds

Make dressing by combining all ingredients. Measuring directly into the food processor then blending for about 10 seconds makes a smooth dressing.

Salad: In serving bowl, toss together all ingredients. Pour dressing over salad and toss lightly. Cover and refrigerate for at least 4 hours or overnight. Just before serving, gently still in chopped egg. Garnish with egg slices.

Some types of vinegar—including red wine vinegar, apple cider vinegar, balsamic vinegar, and cane vinegar—are gluten-free. Other types of vinegar—for example, non-distilled vinegars made from the gluten grains wheat, barley, and rye, and malt vinegar made from barley—are not gluten-free. One needs to check the labels.

This is a great salad/vegetable dish to make when you are having company for a few days. It improves when made a day ahead as the flavours blend so it is generally made ahead and served on the second day of my guest's visit. Add shrimp for a complete light meal or serve alongside grilled chicken, pork tenderloin....so many choices.
