1/2 cup butter or margarine of choice
2 cup white sugar
4 eggs
2 cups sour cream or yogurt or coconut cream with 1 tbsp lemon juice
2 tbsp. baking soda
3 cups flour - * 1-1 mix or All purpose mix*
3 tsp baking power
1/2 tsp salt

Topping
1 cup coconut
1/2 cup brown sugar
1 tsp cinnamon






* 1 cup rice each rice flour, corn starch, tapioca flour with 1 tablespoon potato flour

Directions:
Directions:
Combine ingredients for the topping. Set aside, reserving 2 tablespoons.
Beat butter until light. Gradually beat in sugar until fluffy. Add eggs and beat until well combined.
Add baking soda to sour cream(or yogurt or soured coconut cream). It will foam slightly.
Alternately add it to the butter mixture with dry ingredients.

Put half the batter in the bottom of a pan
Sprinkle all but 2 tbsp. of the topping on the batter. Finish off with the rest of the batter.
Swirl a knife through both layers of batter to create a marble effect. Garnish with remaining topping.

Bake at 350F for 3/4 hour; then lower temperature to 300F for 1/2 hour. (cover top with silicone mat to prevent the loaf from browning too much.) Check for doneness with
