3 cups sugar
1 cup vegetable oil
1 2/3 cup pumpkin (1pound can)
4 beaten eggs

3 1/2 cups flour* gluten free flour mix or rice flour with 1 tsp. xanthium gum
2 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
1/2 tsp. cloves
2/3 cup water

Directions:

Oven at 350F
Bake 45 minutes
Prepare: two 9 X 5 X 3 loaf pans by buttering and lightly dusting with rice flour

Combine: sugar, oil pumpkin and eggs in mixer. Beat until light and fluffy.

Sift dry ingredients together.
Add dry ingredients to pumpkin mixture alternately with 2/3 cup water.
Mix until well blended. Turn into loaf pans.
Bake in oven for 45 minutes until centres spring back when lightly pressed with finger tips.
Cool loaves in pan 10 minutes.
Turn out onto wire rack to cool completely.
