2 cups gluten free rolled oats
1 tsp baking powder
pinch of salt
1 cup packed brown sugar - preferably coconut sugar
1/2 cup melted butter or substitute of choice
1/2 tsp vanilla

Directions:
Directions:
Melt butter and set aside.
Combine dry ingredients and mix well.
Add room temperature butter and vanilla. Mix well.
Divide into two 8 X 8 " ungreasedabout 24 pans, pressing evenly with the back of a spoon to make a smooth surface.
Bake at 300F for 20 minutes.
Let stand 5 minutes to cool before cutting.

*If one lines the pans with parchment papers that comes up the sides of the pan, you can lift the paper out of the pan after the square is cooled. Then, when you cut the square, you will not damage the pan.
