4 large potatoes
1 small onion
2 eggs
3 T. flour
1 tsp. salt
½ tsp. pepper
Oil

Directions:
Directions:
1 – Peel the potatoes and rinse them under cold water to remove excess starch.
2 – Using a box grater or food processor, grate the potatoes.
3 – Drain the potatoes.
4 – Place the grated potatoes on a clean kitchen towel. Squeeze out as much moisture as possible.
5 – Grate the onion as you did the potato.
6 – In a large mixing bowl, combine the potatoes, onion, eggs, flour, salt, and pepper.
7 – Mix thoroughly until well combined.
8 – In a large skillet, heat oil over medium-high heat. You will need enough to generously coat the bottom of the pan for frying.
9 – Once the oil is hot, take a heaping tablespoon of the potato mixture and carefully place it into the hot oil, flattening it slightly with the back of a spoon or spatula to form a pancake shape.
10 – Fry the pancakes for about 3 – 4 minutes on each side or until they turn golden brown and crispy.
11 – Once the pancakes are cooked, transfer them to a plate lined with a paper towel to drain any excess oil.
