1 lbs. mustard greens, coarsely chopped and center ribs removed and discarded
3 slices thick cut bacon
3 tbsp. minced shallot
2 cloves garlic
2 tbsp. whole grain mustard
1 lemon halved

Directions:
Directions:
Bring 6 quarts water to a boil with 1 tsp. salt. Add greens, pushing down to submerge. Cook until just wilted, 3-5 minutes. Transfer to a large bowl of ice water for 1 minute to stop the cooking, Drain in a colander and set aside.

Fry bacon in a skillet until crisp. Remove to paper towel lined plate and reserve drippings. Cool completely and finely chop bacon.

Add shallot to drippings and cook until translucent. Add garlic and cook one more minute. Still in mustard and add greens, tossing to coat. Add ½ salt and pepper, half the bacon and stir to heat through. squeeze half a lemon over the greens, thinly slice remaining half. Move to serving bowl and add sliced lemon and top with remaining bacon.
