Ingredients: BEEF FILLING 1 large onion chopped 3 pounds ground beef 1-2 cans Hatch mild green chiles salt and pepper 2-3 tablespoons enchilada seasoning mix
FOR ASSEMBLY Mission brand white corn tortillas 2-3 bags shredded Mexican cheese blend 3 cans worth of tomatoes from recipe of prepared enchilada sauce
FOR BAKING Preheat oven to 350º Bake approximately 20 minutes covered and 10 uncovered

Directions:Sauté onions until light brown. Add ground beef, stirring to incorporate onions and to break up. Season with salt and pepper and add 2 tablespoons of enchilada season mix. Add the Hatch mild green chiles. Set aside to cool (or store in refrigerator till ready to use)
ASSEMBLY Prepare baking dishes with oil spray and a few tablespoons of enchilada sauce. Take corn tortillas one at a time and dip in sauce, removing excess. Fill each tortilla with approximately two tablespoons of beef mixture with small amount of cheese on top. Turn seam side down in pan, completing till all tortillas and beef are used. Cover generously with enchilada sauce then shredded cheese. Can be baked immediately or stored in freezer as is until use.
