⅓ cup butter, softened
⅓ cup packed brown sugar
⅓ cup chopped walnuts
1 cup granulated sugar
8 ounces cream cheese
1 TBS lemon juice
2 TBS milk
1 egg
½ teas vanilla extract

Directions:
Directions:
Preheat oven to 350 degrees.
TO MAKE PASTRY: cream together the butter and brown sugar until light and fluffy. Add in the flour and chopped nuts and stir until mixture becomes crumbly. Set aside ¼ cup to use as a topping. Press pastry mixture into an 8-inch square pan and bake for 12-15 minutes. Let cool on rack.
TO MAKE FILLING: Beat together the sugar, and cream cheese until smooth. Stir in the egg, milk, lemon juice and vanilla, mix well. Spread filling mixture over baked crust. Sprinkle reserved mixture on as a topping.
Bake for 25-30 minutes. Let cool on wire rack and refrigerate.
SERVE WITH FRUIT.

The corporate office of Highlights for Children is located in Honesdale, PA. At Christmas the town has a Christmas Carnival, and local businesses host events. Highlights has a huge open house serving cookies, hot chocolate, coffee and tea, and offers children's books published by them, at a discounted price, a once-a-year event that residents stock up on Christmas presents, including me especially when my grandchildren were young. While working at their Conference Center I was in charge of making sure there were enough cookies, and that we wouldn't run out, I baked cookies for a solid week prior, day and night. I would bake in our ovens at the Conference Center and come home and bake more in my own kitchen. These Cheesecake Bars are cookie-like and one of the items that I made, so if you are making this for a crowd and using a half-sheet pan, multiply the recipe by 3 for each pan you are baking.
