1 1/2 cups shortening
1 1/2 cups peanut butter
3 cups sugar
4 1/2 cups all purpose flour
1 1/2 teaspoons baking soda
1 1/2 teaspoon salt
1 1/2 teaspoons vanilla
1/3 cup boiling water

Directions:
Directions:
Cream the shortening, peanut butter and sugar in the stand mixing bowl until light and fluffy. Mix in the flour, baking soda, salt, and vanilla. Add the boiling water and mix well. I use a cookie scoop and arrange on parchment paper on a cookie sheet. Flatten with a fork dipped in sugar making a crisscross pattern. Bake at 350 degrees for 15 minutes.

These peanut butter cookies were served in the Sparkman High School lunchroom in the early 70s using commodity peanut butter. Delicious!!!!! Years later I called Mrs. Wilbanks who was one of our lunchroom ladies to get the recipe. She gave me the recipe from a Lunchroom Cookbook which used large quantities such as quarts of sugar, flour, etc. I had to convert the recipe to what you see above to bake a manageable amount. The original recipe also called for lard instead of shortening.
