Tzatziki Sauce:

- 1 cup Greek yogurt
- 1/4 cup grated English cucumber
- 1 tsp freshly minced garlic
- 1 tsp EVOO
- 1 tbsp fresh dill
- 1/4 tsp sea salt or to taste
- 1/4 tsp freshly cracked black pepper
- 1 tbsp fresh lemon juice

Mediterranean Meatball:

- 1/4 cup panko breadcrumbs with seasoning or you can used crushed fried onions - I used panko
- 1 large egg
- 2 tbsp chopped fresh flat-leaf Italian parsley
- 1 tbsp freshly minced garlic
- 1/2 tsp ground cumin
- 1/2 tsp sea salt
- 1/4 tsp freshly cracked black pepper
- 1/2 onion, chopped
- 2 scallions, chopped
- dill (use what your heart desires)
- 1 lb ground chicken or beef

Cucumber Tomato Salad:

- 1 cup finely diced English cucumber
- 1 cup finely diced tomatoes
- 1/2 cup finely diced red onion
- 1 tbsp chopped flat-leaf Italian parley
- salt & pepper to taste

Couscous:

-1 cup water
- 1 tsp unsalted butter
- 1 cup couscous
- juice of 1/2 a lemon
- salt & pepper to taste

Toppings:

- feta cheese
- freshly chopped parsley for garnish

Tzatziki Sauce:

1. Use cheese cloth and strain 1 cup of Greek yogurt and use another cheese cloth to strain grated cucumber.

2. After strained, combine yogurt and cucumber in a bowl with 1 tsp garlic, 1 tsp olive oil, 1 tbsp fresh dill, 1/2 tsp sea salt, and 1/4 tsp pepper. Mix in 1 tbsp fresh lemon juice and stir to combine. Give it a taste and adjust the flavors to your liking. Cover and refrigerate until ready to serve.

Mediterranean Meatballs:

1. Preheat oven to 400 degrees

2. Combine all the ingredients and form into meatballs using a tbsp measure.

3. Cook for 10-15 minutes or until done.

Cucumber and Tomato Salad:

1. While the meatballs are cooking, dice the cucumbers, red onion, tomatoes, and parsley and combine. Add salt and pepper to taste.

Couscous:

1. While meatballs are resting, cook the couscous according to the box and add lemon juice and salt and pepper to your liking.

Assembly:

1. Spoon 1/2 cup couscous into each serving bowl. Top with about 1/4 cup of the cucumber and tomato salad and 4-6 meatballs. Sprinkle feta and drizzle with tzatziki and garnish with parsley.
