1 1/2 cups chopped green onion
1 1/2 cups chopped onion
1 cup chopped green peppers
1 cup chopped celery
3 tablespoons garlic, minced
2 sticks salted butter
2 lbs raw shrimp, peeled and deveined
4 lbs smoked sausage cut into slices (Original Conecuh)
(Brown half of this and put the other half in the pot as directed)
4 cans diced tomatoes (56 ozs)
3 cups water
6 bay leaves
1 1/2 tsp salt
1 1/2 tsp cayenne pepper
3 cups rice
Hot sauce to taste

Melt the butter in a large Dutch oven. Add green onion, onion, green pepper, celery, and garlic. Sauté the vegetables until tender, then add the shrimp and the 2 lbs of not browned sausage. Cook the mixture 5-10 minutes until shrimp are pink and mix is simmering. Add all remaining ingredients except the rice. Bring to a simmer and reduce heat. Simmer for 15 minutes, stirring occasionally. Stir in the rice and the 2 lbs of browned sausage and cover. Cook the jambalaya for 30 minutes or until the rice is tender. Scrape the bottom of the pot and stir frequently while the rice cooks, about every 5 minutes. Remove from heat and allow jambalaya to rest for 15 minutes or longer while covered. Add hot sauce to taste.
