2 T. Oil
8 (8 inch) flour tortillas
1 C. Refried Beans, warmed
1 C. cooked, Mexican seasoned ground beef
1/2 C. Taco Sauce
1/4 C, red Enchilada Sauce
1 C. shredded Mozzarella Cheese
1 C. shredded Mexican Cheese blend
1/2 C. diced Tomatoes
3 T. sliced black olives - optional
3 T. chopped green onions - optional
Directions:
Directions:
1) Heat 1 tablespoon of oil in a deep skillet over high heat. Pan fry the tortillas one by one, flipping them over often, until golden brown, about 2-3 minutes per side. Add more oil if needed. Place the tortillas on paper towels to drain excess oil.

2) Preheat the oven to 400º

3) Place 4 pan fried tortillas on a baking sheet. Slather 3 T. of refried beans evenly over each tortilla. Top with ground beef and half of the mozzarella. Close it up with another piece of tortilla.

4) In a bowl, combine the taco sauce and enchilada sauce. Spread 2 T. of sauce evenly over each tortilla. Sprinkle the remaining cheeses on top.

5) Bake the pizzas for 3-4 minutes, or until cheeses are melted. Remove from heat.

6) Top the pizzas with olives, tomatoes, etc. if desired. Cut into quarters.

4 pizzas are too much for 2 people. The leftover pizzas are okay if warmed up in an air-fryer. Not as good as fresh though.
