1 Pound Shredded Boneless Skinless Chicken Breast, roasted, and shredded
1 Cup Fat-Free Sour Cream (optional )
2 Cups Frozen Corn
4 Cups Baby Spinach
1 White Onion Diced Fine
1 Yellow Bell Pepper Diced Fine
3 Poblano Peppers Roasted and Diced
3 Cloves Minced Roasted Garlic
5 Cups Water
3 Cups Fat-Free Low Sodium Chicken Broth
1 Tablespoon Cumin
1 Teaspoon Salt
1 Teaspoon Black Pepper

Crockpot Directions:
Combine all ingredients except sour cream into Crockpot.
Cook on high heat for 3 hours.
Stir in sour cream right before serving. (if using)
