1 cup Splenda Monk Fruit
zest of 1 lemon
2 large egg whites
1 teaspoon almond extract
2 1/2 cups almond flour
1/2 cup finely chopped almonds

Directions:
Directions:
1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.

2. Make lemon sugar by putting the Splenda and zest in a processor and pulse/process for about a minute until the zest is fully incorporated and the Splenda is moist.

3. In a mixing bowl whisk the egg whites until foamy (not stiff). Whisk in the almond extract.

4. Add the lemon sugar and almond flour and mix thoroughly till you get a moist dough.

5. Use a small scoop or tablespoon, form into small balls, flatten and pinch with thumb and two fingers to form the shape.

6. Dip tops and sides with the finely chopped almonds.

7. Bake for 14 minutes.

8. Cool on baking sheet for 5 minutes, then transfer to a rack to cool.
