4 pounds chicken wings, halved at joint and wingtips removed, trimmed
Table Salt
2 teaspoons kosher salt
2 teaspoons baking powder
½ cup hot sauce
¼ cup ghee, melted
1 tablespoon honey

Directions:
Directions:
Adjust oven rack to middle position and heat oven to 475 degrees. Set wire rack in aluminum foil–lined rimmed baking sheet covered with table salt to soak up grease. Pat wings dry with paper towels, then toss with salt and baking powder. Arrange wings in single layer on prepared rack. Bake wings until golden on both sides for 1 hour, flipping wings and rotating sheet halfway through baking.

Whisk hot sauce, melted ghee, and honey together in large bowl. Add wings to sauce and toss to coat. Serve.
