1 1/2 cup shredded chicken
2/3 cup salsa
1 1/2 tsp cumin
1 tsp oregano
1 cup Spanish rice
1 1/4 cup cheese (Colby, cheddar, or Mexican)
Burrito-size tortillas
Oil

Directions:
Directions:
Preheat oven to 425º. Line baking sheet with parchment paper. Combine chicken, salsa, cumin, oregano, rice, and cheese. Divide mixture between 4-5 tortillas; roll and place seam side down on paper. Brush with oil. Bake until golden (about 20 minutes). Remove from oven and sprinkle with additional cheese. Serve with sour cream, additional salsa and taco toppings
