4 cups red potatoes
2 tablespoons horseradish (heaping)
1⁄2 cup butter, softened
1 teaspoon salt, and to taste
1 cup gouda cheese, shredded

Directions:

1. Cut away blemishes in potato skins, and cube.

2. Boil potatoes until very soft and drain off water.

3. Add butter and salt, and whip with a rotary beater until butter melts.

4. Whip in remaining ingredients.

5. Adjust seasoning.

I like to use the Instant Pot to boil the potatoes. Set the timer for 12 minutes and it does the rest, much less mess to clean up from the potatoes boiling over on the stove.
