Green Beans (14 pounds needed for 7 quarts canned green beans)

Used filled out, tender, crisp pods. Discard any that are diseased or appear rusty. Wash beans and trim ends. Leave beans whole or cut/snap into 1 - inch pieces.
HOT PACK: Boil enough water in large pot to cover beans. Add beans to boiling water and boil 5 minutes. Fill jars loosely with beans, leaving a 1 - inch head space.
RAW PACK - Boil a pot of water to pack beans. Fill jars tightly with raw beans, leaving a 1 - inch headspace. Add boiling water to cover beans, leaving a 1 - inch head space.
Add canning salt to jars, if desired ½ teaspoon per pint or 1 teaspoon per quart. Remove air bubbles. Wipe jar rims and adjust lids.
Process in pressure canner.
WEIGHED CAN GAUGE, 10 pounds pressure DIAL CAN GAUGE, 11 pounds pressure
PINTS, 20 minutes
QUARTS, 25 minutes

When I canned my first beans in the 1970's, Pa was my teacher. Oh, how I remember those nights of getting Tom and Andrew to bed and then Pa and I would can beans to after 10 o'clock at night. She didn't need a recipe. It was in her head. I usually put up about 40+ jars of beans at that stage of my life.
I used her pressure canner which I outfitted with a new gasket and had it checked at the Extension Office for safety, it cleared. This was definitely a pre 1970's canner, but according to the Extension Service as of 1999 was save to use. I went several years without canning and in about 2005 bought a new canner. When buying that new canner which cost $50+, I thought I will never use this enough to pay for it, but I think I have. I recommend purchasing from your Extension Service a guide to Food Preservation. It is a source of guidance in canning properly and safely. Also, it has many recipes for canning and preserving. I do jellies, preserves and other food preservation using a water bath. This book gives you directions on using a water bath. Also, SURE-JELLİ is a wonderful product to use when making jellies and preserves. All directions are in the box. Easy jelly and preserves.
