- 1/4 cup unsalted butter
- 2 tbsp olive oil
- 4 large yellow onion, thinly sliced
- 1/2 tsp kosher salt
- 1/2 tsp freshly ground pepper
- 2 tsp fresh thyme
- 2/3 cup low sodium chicken broth or beef broth
- 1 tbsp balsamic vinegar
- 4 medium boneless chicken breasts
- 1 cup shredded gruyere or mozzarella cheese

Directions:

1. Preheat oven to 400 degrees.

2. In a large heavy bottomed pot, melt the butter and olive oil together over medium heat. Add the sliced onion, and 1/2 tsp salt and pepper.

3. Cook for 5-7 minutes, or until softened.

4. Continue cooking on medium heat for 5 minutes, stir well, and reduce heat to medium low.

5. Stir the onions every five minutes, or until golden brown and caramelized, about 40 minutes.

6. Add the broth, balsamic, and fresh thyme to the pan.

7. Simmer for approximately 10 minutes, or until the sauce coats the back of the spoon.

8. Spray a 9x13 baking pan with cooking spray.

9. Spoon 1/2 of the onion mixture over the bottom of the pan.

10. Top with chicken.

11. Spoon remaining onion mixture over the chicken, and top with cheese.

12. Bake for 40-45 minutes, or until the chicken registers 165 with a meat thermometer (depends on the thickness of the chicken).
