Rhubarb Coffee Cake Recipe

1/2 c. butter
1 1/2 c.sugar
1 egg
1 c buttermilk
1 t sp baking soda
1 tsp vanilla
1/2 tsp salt
2 1/2 c flour
3 c chopped rhubarb, chopped


1 c.brown sugar
1/2 c. chpped walnuts

Topping after it's baked:

1/2 c butter
1/2 c. sugar
1/2 c. light cream, 1/2 & 1/2, or evaporataed milk
1/2 tsp vanilla

Cream butter and sugar.

Add egg and buttermilk.

Add dry ingredients and vanilla, stir. Then add rhubarb.

Pour into greased 9 x 13 pan. Mix together brown sugar and walnuts and sprinkle over the top.

Bake at 350 for 45 minutes.

For topping, heat all ingredients in saucepan and then pour over baked cake.

Do not boil mixture or sugar will crystallize.

This cake was always a sure sign of spring. We always had rhubarb plants growing up and managed to freeze what wasn't turned into a pie or cake.
