1/2 c. butter
1 1/2 c.sugar
1 egg
1 c buttermilk
1 t sp baking soda
1 tsp vanilla
1/2 tsp salt
2 1/2 c flour
3 c chopped rhubarb, chopped





Topping after it's baked:

Directions:
Directions:
Cream butter and sugar. Add egg and buttermilk. Add dry ingredients and vanilla, stir. Then add rhubarb.
Pour into greased 9 x 13 pan. Cover with first topping. Bake at 350 for 45 minutes.



Do not boil mixture or sugar will crystallize.
 

First Topping

1 c.brown sugar
1/2 c. chopped walnuts

Mix together brown sugar and walnuts and sprinkle over the top of cake before baking.
 

Second Topping

1/2 c butter
1/2 c. sugar
1/2 c. light cream, 1/2 & 1/2, or evaporated milk
1/2 tsp vanilla

Heat all ingredients in saucepan and then pour over baked cake.

This cake was always a sure sign of spring. We always had rhubarb plants growing up and managed to freeze what wasn't turned into a pie or cake.
