1 1/2 cups dried apricots
1/2 cup of toasted pecans chopped
1/2 cup butter at room temp
1 1/2 cup flour
1 tsp baking powder
1/4 tsp salt
1/2 cup sugar
1 tsp vanilla extract
2 eggs, beaten
1/2 cup milk
1/2 to 1 tsp orange zest

Cut dried apricots into 1/3 inch cubes and pour over just enough boiling water to barely cover. Let slit for 20 minutes and drain.

Preheat oven to 375ºF and butter three 3.5 x 6 inch loaf pans

In a bowl whisk together flour, baking powder, and salt. In a larger bowl, cream the butter, sugar, and vanilla. Don’t worry. If it’s a little lumpy. Add the eggs one at a time and bet until smooth. Fold in half the flour mixture, half of the milk and repeat. Fold in apricots, nuts, and orange zest.

Bake for about 40 min for small loaves, 50 min for large load, or until knife slide into the loaves and comes out clean.
