1/2 c. soy sauce, low sodium
1/2 c. light brown sugar
2 Tbsp. siracha
1 Tbsp. ginger
1/8 tsp. black pepper
1 Tbsp. water
2 tsp. cornstarch
2 red peppers, chopped
1 onion, chopped
1 can French-style green beans, no salt added (do not drain)
- add more green beans if desired (drain additional cans)
2 lbs. boneless pork roast/loin, cut into 2-inch chunks
2 c. brown rice, dry and uncooked

Directions:
Directions:
Combine the soy sauce, brown sugar, siracha, ginger, and pepper in bottom of slow cooker.
In small bowl, combine water and cornstarch; add to slow cooker and mix.
Add pork and stir to coat.
Add peppers, onion, and green beans.
Cook until pork is cooked through (to at least 145º), 3-4 hours on high or 5-6 hours on low.
Cook rice according to package directions.
Top rice with pork mixture.
Add salt to taste.
