1 (15 oz) can black beans, rinsed and drained
¾ c corn
½ red bell pepper (diced)
⅓ c. chopped fresh cilantro
1 T. chopped chipotle chile
½ tsp. dried oregano
½ tsp. ground cumin
¼ c. whole wheat bread crumbs
3 lge. eggs, lightly beaten
1 T. + 1 tsp olive oil, divided

Topping:
½ avocado, mashed
⅓ c. sour cream
1 tsp. lime juice

8 c baby spinach

Directions:
Directions:
1) Combine first nine ingredients, form into patties and cook patties in 1 T. oil, turning once (5 minutes per side.) Remove from skillet.
2) In same skillet, sauté spinach in remaining 1 tsp. oil over medium-high heat until wilted (3 minutes). Season with pinch of nutmeg, salt and pepper.
3) In another bowl, mix avocado, sour cream and lime juice.
4) Serve burger, topped with spinach and avocado mixture on a bun.
