1/2 lb. breakfast sausage
6 ounces bacon (cut in pieces before cooking)
1 onion, diced
1 red pepper, diced
1 orange pepper, diced
1 lb shredded white sweet potato
14 eggs, beaten
1/2 c. coconut milk
1 tsp. salt
3/4 tsp. dry mustard
1/4 tsp. cracked black pepper

Directions:
Directions:
1) Shred sweet potato and pack in bottom of greased 9x13 casserole dish.
2) Cook breakfast sausage, bacon pieces in pan until cook and set aside.
3) Sauté onion and bell pepper in same frying pan using some of bacon grease.
4) Mix in meat and layer on top of shredded sweet potatoes.
5) Mix eggs, coconut milk, salt, dry mustard, and black pepper and pour over top of entire casserole.
6) Bake at 350º for 40-50 minutes or until eggs are fully cooked through and not runny in middle.
