1 rack pork ribs (ideally baby back)
1/2 cup carribean jerk seasoning
BBQ sauce of your choice (ideally Jamaican inspired but I've used a variety)

Caribbean jerk seasoning (I usually make 3x this amount and store for later):
1 tablespoon garlic powder
2 to 3 teaspoons cayenne pepper
2 teaspoons onion powder
2 teaspoons dried thyme
2 teaspoons dried parsley
2 teaspoons sugar
2 teaspoons salt
1 teaspoon paprika
1 teaspoon ground allspice
1/2 teaspoon black pepper
1/2 teaspoon dried crushed red pepper
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon

1. Coat ribs generously with Jerk seasoning. Bake in oven at 325 degrees for 3 hours.

2. Coat the cooked ribs generously with sauce and bake at 375 degrees for 30 minutes.

3. Let rest for 10 minutes.

We started cooking this when we did the keto diet years ago (using sugar free sauce and sugar substitute for the seasoning blend). We loved it enough to keep eating it.
