1 1/2 boneless, skinless chicken breast- (4 servings)
1 tablespoon olive oil
1/2 teaspoon kosher salt
1/4 teaspoon pepper

1/4 cup balsamic vinegar

6 ounce fresh mozzarella
1/4 cup basil leaves
2 ripe tomatoes, sliced

Directions:

1. Preheat oven to 400 degrees.
2. Heat 1 tablespoon olive oil in large ovenproof skillet on medium high.
3. Season 4 boneless, skinless chicken breasts with salt and pepper and cook them until golden brown - 4-5 minutes.
4. Reduce heat to medium and add 1/4 cup balsamic vinegar and gently simmer until slightly thickened, about 2 minutes. Transfer the skillet to the oven and roast 10 minutes.
5. Turn chicken to coat in vinegar. Top with fresh mozzarella cheese slices and return to oven until the cheese begins to melt.
6. Remove from oven, and top with sliced tomatoes and chopped basil. Drizzle any additional balsamic glaze from the skillet.
7. Serve with crusty bread and a salad. Sooooo good!
