25 to 28 tomatoes
6 oz. can tomato paste
15 oz. can tomato sauce
2 large onions, minced
4 garlic cloves, minced
3 TBSP olive oil
2 TBSP lemon juice
1 tsp cracked pepper
˝ TBSP Italian seasoning
2 TBSP sugar
2 tsp cumin
2 TBSP parsley, chopped
1 TBSP oregano
1 TBSP basil
1 tsp rosemary
1 tsp celery seed
2 tsp salt
˝ tsp thyme

Directions:
Directions:
Peel and puree the tomatoes. Put olive oil in a deep pan and sauté the onions and garlic until transparent. Add the tomato puree and the rest of the ingredients; stir well to blend. Cook on low until mixture is reduced by ˝, stirring occasionally. This will take 1˝ to 2 hours.
When sauce is done and nicely thickened, ladle into hot pint size jars, clean the rims of the jars and seal.
Process for 25 minutes in hot water bath.
