1 T. olive oil
1/4 c. chopped onion
2 c. pre-washed package of fresh baby spinach
1/2 c. cherry tomatoes halved
1/2 c. sea scallops

Directions:
Directions:
Heat oil in non-stick pan. Add onion cook over medium heat, stirring frequently until softened 1-2 minutes.
Add spinach and tomatoes, cook, tossing gently until spinach is wilted 2-3 minutes.
Push vegetable mixture aside. Add scallops brown quickly on all sides, combined scallops with vegetable mixture, cook, tossing mixture until scallops are cooked thorough, about 1 minute.
