1/3 c. honey
¼ c. soy sauce
¼ c. finely chopped onions
2 T. oil
1 ½ T. minced garlic
1 T. white vinegar
2 ½ lbs chicken


Optional
1 tsp. sesame oil
¾ tsp. fresh minced ginger
Salt and pepper to taste
Parsley for garnish

Directions:
Directions:
1 – In a shallow bowl, combine honey, soy sauce, green onions, oil, garlic, vinegar, sesame oil, and ginger. Mix well and set aside.
2 – Pat chicken dry with a paper towel. Season with salt and pepper then transfer the chicken to the bowl with the marinade.
3 – Cover and marinate the chicken for at least 30 minutes if time allows (or overnight).
4 – Preheat oven to 425 degrees.
5 – Transfer chicken along with marinade to a cast iron skillet or baking dish. Bake for 20 – 25 minutes, flipping twice while baking to ensure the chicken doesn’t dry out on top.
6 – Broil for 5 minutes at high heat until golden browned and slightly charred on the edges. The chicken should have an internal temperature of 165 degrees.
7 – Garnish with parsley and optional sesame seeds.
8 – Serve chicken with pan juices over steamed rice, cauliflower rice, zucchini noodles, regular noodles or mashed potatoes.
