1 3-lb chicken, cut into pieces
6 medium russet potatoes, peeled & quartered lengthwise
1/4 cup olive oil
2/3 cup lemon juice
3/4 cup chicken broth
4 cloves garlic, crushed
2 tsp. dried oregano

Directions:
Directions:
Preheat oven to 375 degrees F.

Place chicken & potatoes in a large roasting pan. Season with salt & pepper. Combine remaining ingredients in a jar, shaking well to combine. Pour mixture over chicken and potatoes.

Bake uncovered for 1 hour. Remove chicken to a separate dish; cover with foil to keep warm. Return potatoes to oven for another 15 minutes.
