Ingredients: 8-10 red potatoes 2 c. 33% less sodium or unsalted chicken broth 1 c. half and half ⅛ tsp. garlic powder 8 oz. Velveeta cheese, cubed 2 c. sharp cheddar cheese, divided 1 (12-ounce) low sodium bacon

Directions:Peel & cube 8-10 red potatoes. Place potatoes in a deep skillet or deep stock pot, season with garlic powder, cover with approximately 2 c. of chicken broth over medium-high heat. Simmer for 10-15 minutes or until potatoes are soft and tender. Cut bacon into ¼ inch strips, fry in a separate large skillet until crispy and drain on paper towels until dry. For potatoes turn heat to low and stir in 1 c. half and half, 8 oz. cubed Velveeta cheese and 1½ c. sharp cheddar cheese. Continue stirring until all of the cheese has melted. Garnish each bowl of soup with 1 tsp. of shredded sharp cheddar cheese and 1 tsp. of bacon. |
